Hope your all having a great Irish day. My family heritage goes back to Scotland and Ireland, we traced it back to the 1600's.
My favorite way to cook cornbeef is to place into a roaster pan,surround it with Guinness Beer and pat the top of cornbeef with brown sugar. Roast with lid at 325 degrees for about 5 hours. Remove let cool and serve sliced cornbeef on rye or soda bread with irish cheese and tarragon mustard.
Toast the day with a smooth glass of Guinness.
